The Basic Home Brewing Process

Step 3: Brewing (Boiling and Adding Hops)

The boiling process is one of the most exciting parts of the home brewing process as this is the step where all of your ingredients, except for priming sugars and yeast for fermentation) come together as one! Be sure that when you are preparing your equipment that you have about a 5 gallon or larger brew kettle with enough space on the top to allow for some foaming during the brewing process.
The boiling step in the homebrewing process is an essential step in order to activate the oils in the hops to allow for bitterness, aroma, and flavor. Also the boil will sanitize al the ingredients in the brew kettle as well as remove any proteins and some chemicals from your home brewed beer-to-be from the heat, evaporation and movement of the water during boiling.
The boiling process in home brewing usually takes about 60 minutes, but normally not over around 90 minutes as longer boils could result in off flavors from over boiling hops and more.
One more thing to mention here is the importance of keeping the lip partially off of your brewing kettle during the home brewing process. We recommend that you keep the kettle partially uncovered in order to allow chemicals and other things that will cause off flavors in your home brew to evaporate from the brewing kettle. In addition, we all know that a boil over can occur very quickly when boiling liquid is left covered. When you are boiling your wort, try to keep it at a rolling boil and not too turbulent as to help prevent any messes in your home brewing environment.
After you have been brewing for about an hour and have added your hops according to your schedule, it is time to turn off the heat and begin the cooling down steps in the home brew process. If you have a wort chiller then great, this would be the time to place the kettle inside the wort chiller and begin cooling it down.
Again, the point of quickly cooling down the wort is so that when you add the yeast it is not too hot for it. If your wort is hot and you pitch the yeast, the yeast may all die off. Also it is important to keep the wort as sanitized and clear of any air from now on in order to prevent your home brew from getting infected.
When your wort is cooled down to around 85-90 degrees Fahrenheit, transfer the wort into the fermenter. At this point it is okay to let it splash a bit inside the fermenter as you transfer it in order to aerate the wort to help yeast to grow. Once completed, add more water in order to bring the wort to the 5 gallon mark in the fermenter.
This is where you should take a sample in order to measure the original gravity of the beer before pitching the yeast. Once you have taken a sample, do not put the wort back into the fermenter it could already be infected.
