Hops

Hops are an integral part of the beer brewing process and was introduced to brewing beer over 1,000 years ago. A hop is actually a flower with special oils that actually balances out the sweetness of the malts involved in the home brewing process.

Hops provide that citrusy flavor and aroma often found in beers which help distinguish different beer styles through aroma, flavor and bitterness qualities.

There are many different types of hops all containing different acidity levels or alpha levels and are found in pellet, leaf and whole hop form. The oils that produce the hop aroma, flavors and bitterness are released during the boiling of the wort in the homebrewing process. The hops are added at different times during the boil which is often referred to as the hopping schedule.

There are basically four different types of hopping processes and these are bittering, flavor, aroma and dry hopping.

Bittering hops do not provide much flavor as their main purpose in the boil is to help balance out the sweetness in the boil while flavoring and aroma hops, which are added in the final 20 to 5 minutes of the boil, are used to help add the aroma and flavors desired in the beer without boiling off all the oils provided by the hops. Dry hopping add an enormous amount of hop seasoning to the beer when it is added after the fermentation process has finished its first stage in order to add a heightened citrus flavor and hop aroma to the beer.
